How to Make Fried Rice

Fried rice is a cousin to jollof rice as we all know and it is also served side by side jollof rice in most Nigerian parties. However, most of the time when fried rice is served it doesnt taste as good as the jollof rice.

 Do you know why? It is because it should be cooked in batches and not in mass like jollof rice in other to retain the taste and firm look. As we all know cooking in batches for over 50 to 1000 guest or more will take alot of time and Nigerians most especially the caterers have got no chill while some do not know this secret will and will just cook it making it end up looking mosity.

 If you pay close attention you will notice most eatries cook in batches that is the secret to tasty fried rice and even jollof rice to an extent. Personally i really dont like taking fried rice in parties. Jollof is the major Key. Fried rice is one of the most widely eaten Nigerian food. The process of making fried rice is a bit complicating but with me i could make it easier. Firstly let us run through the ingredients needed. 


Ingredients for  fried rice.


  • 6 cups of rice
  •  sliced Carrot
  • Green beans 
  • Peas 
  • Sliced Green pepper
  • Liver 
  • Turkey,chicken, beef  goat meat
  • Vegetable oil 
  •  sliced Onions
  • Curry powder and thyme
  • Salt and seasoning cube to taste

How to make Fried Rice.



Set your sauce pan on heat, allow to dry, then pour in a full spoon vegetable oil . It is quite perferable  to continue with the same oil you used while frying the turkey but you need just a full cooking spoon of it.
Allow to heat then add the sliced onions stir for 1-2 minutes then add the chopped carrot ,boiled liver, green pepper,green peas and any other vegetable like cabbage you wish to add.
Stir for 2minutes then add the curry and thyme powder. Curry is brings out the colour of fried rice, so add and stir till you are satisfied with the color.( You only need little thyme).
pour the broth which is the meat stock (omi eran water derived after boiling beef) in a pot and place on heat while you remove the stir fried vegebtables. Add a teaspoon of salt , add 1-2 cubes of seasoning cubes then stir and taste, you may add more salt.
Add perboiled rice in the meat stock and add a little water that can cook rice perfectly. It is better to keep adding water little by little than to have added excess.
Please note that Fried rice shouldnt be too soft. Once the rice is getting dry add the fried vegetables and leave it to simer for about 3 minutes and once the rice is perfectly dry mis it all together.


Your fried rice is ready to be served. Always use a wooden spoon to stir and not a cooking spoon while cooking fried rice to avoid breakage.

OBE ILA ASEPO (Okro Soup)

This is actually my mom's best soup.  Hmmmmnnn... This is a very intresting topic i must say. As a yoruba girl. The word aso ebi means Cloths for Family i.e something that will distinguish family from visitors .
