Hi Everyone, Fried rice is a cousin to jollof rice as we all know and it is also served side by side jollof rice in most Nigerian parties. However, most of the time when fried rice is served it doesnt taste as good as the jollof rice. Do you know why? It is because it should be cooked in batches and not in mass like jollof rice in other to retain the taste and firm look. As we all know cooking in batches for over 50 to 1000 guest or more will take alot of time and Nigerians most especially the caterers have got no chill while some do not know this secret will and will just cook it making it end up looking mosity.
